GREEN TEA CHIFFON CAKE
For Cake:
7 eggwhites
3/4 cup white sugar
1/2 teaspoon cream of tartar
2 cups cake flour, sifted
3/4 cup white sugar
1 Tablespoon baking powder
1/2 cup corn oil
7 eggyolks
3/4 cup water with 1/2 teaspoon matcha green tea powder blended in
1. Sift together in a bowl: the cake flour, 3/4 cup white sugar and baking powder. Set this aside.
2. In a clean mixing bowl, beat the eggwhites with the cream of tartar at highest speed. When the whites are smooth and shiny, add the white sugar, a little at a time. Keep beating at highest speed till blended and soft peaks form.
3. In the bowl with the dry ingredients, make a well in the center. Add the yolks, green tea mixture, oil. Blend well with a wire whisk or a mixer.
4. Fold gently the eggyolk-green tea batter into the eggwhites.
5. Pour batter into a round tube pan. Bake in a preheated oven of 350 degrees for about 45 minutes.
6. Test for doneness, and then allow to cool on the counter for at least 8 hours before putting the icing.
GREEN TEA ICING
* Makes 2 cups
1/2 cup butter, unsalted & melted
1/2 teaspoon matcha green tea powder
1/3 cup heavy cream
3 cups confectioners’ sugar
1 drop green food color
§ Melt butter and while still warm, add the green tea powder. Blend well till all the powder is diluted.
§ In mixer, at high speed, slowly add the confectioners’ sugar, half a cup at a time.
§ Alternately add the heavy cream, 1 tablespoon at a time.
§ Keep adding the sugar till mixture is icing consistency.Add the single drop of food color almost at the end. Beat and blend well. Refrigerate for about an hour before icing the cake, for easier handling.
COOK’S COMMENTS: Matcha green tea powder can be found in the tea aisle of most Asian groceries. Mine is a large, tall can and was quite pricey. It can also be used to make a fine pot of tea. This is an easy cake to make, considering one has to do it from scratch. But the result is a delightful, definitely delicious and unique cake. Quite a refreshing change from all the other rich desserts of the holidays just recently celebrated.
