Green tea ice cream

This homemade Green tea ice cream recipe is really creamy and delicious. It isn't too sweet, but it tastes wholesome and farmyard fresh!

Homemade Green Tea Ice Cream



Ingredients:



3 cups of clotted or very thick cream
1 cup whole milk
1/2 vanilla bean, split sideways
9 egg yolks
3/4 cup white sugar
2 tablespoons of matcha (powdered green tea)


Method



Over medium heat, combine cream, milk and the vanilla bean in a saucepan and stir occasionally.
Take care that the mixture doesn't scorch or burn on the bottom of the saucepan.
Without letting the mixture boil, bring to a fast simmer.
Take off heat and leave to infuse for 15 minutes
In a medium bowl, whisk together the egg yolks and sugar.
Whisking constantly, gently pour the milk mixture (now infused) into the egg and sugar mixture.
Put the whole mixture into the saucepan once again and cook over a medium heat, stirring all the time with a wooden spoon.
When the mixture is thick and creamy (at about 180 degrees) test it by dipping the wooden spoon into the mixture.
Turn spoon over and let mixture run off. If there is a coating left on the back of the spoon, the mixture is ready.
When ready, quickly remove from heat and whisk in the green tea.
Half fill a large bowl with cold water. Strain the mixture into a smaller bowl to remove the vanilla bean.
Now place the smaller bowl into the larger one with the water in it, and let the mixture cool.
Stir slowly and consistently until at room temperature.
Place in the freezer until set to 'ice cream consistency'.
Serve on a side-plate with a sprig of mint and wafers.
