Green Tea Muffin( Tried)


Don't you love warm muffins for breakfast?
The recipe has 2 teaspoons of matcha green tea powder, but if you prefer the taste of the green tea to be lighter, use only 1 teaspoon.
Ingredients
·  2 or 3 tablespoons sugar( 2 will be just nice but may be too plain for some)
·  2 cups of flour (plain) - ( Can use 220g self raising flour)
·  1 tablespoon baking powder( Dont use this if Self raising flour is used)
·  a few drop of lemon drops
·  1 egg, lightly beaten
·  1 cup milk( .245L)
·  1/4 cup melted butter( 60g)
·  2 or 3 teaspoons matcha green tea powder 
  • 1/4-1/2 cup of vegatable oil 

Almond flake(Optional)

extra butter to spread in case the muffins are a little dry.
Method
Preheat the oven to 375 degrees F( 270 C).

Grease the muffin pans.

1)Mix Milk and green tea powder together. Best to see green tea dissolve in milk. Then, melted butter or oil.

2)Beat Egg and sugar together

3)Mix flour, baking powder( no baking powder if self raising flour is used)

Fold in misture from 1) & 2) unto flour mixture. Gently folding and not beating.

Spoon into the muffin pans to make them about three quarters full and bake for 20-25 minutes in the oven. Can consider to add 1 to 2 Almond flake on top of each muffin once mixture is settled on muffin pan.
You can check to see if they are ready by using a steel 'needle' to insert into the muffins. If the inserter comes out 'clean', then the mixture is cooked and you must take them out straight away, or risk the muffins being a little too dry.
Serve with green tea to drink, and a dash of butter on the muffins. Alternatively, the muffins can be sweetened with a frosty icing if you like.
Icing
Mix icing sugar and lemon juice (freshly squeezed) in a small bowl until the desired consistency. Remember that a little goes a long way!

  1. Can add cut fruits in the middle of each muffin to add moist to muffin.

  3. Can also use Apple sauce to add moist to the muffin

  4. No oil if Apple sauce is use. Drain water juice if chunky apple sauce is used.

  5. Try this for 50 muffins

    Mix 6 eggs + 725g Sugar

    add, 600 ml Oil

    then, 960ML milk

    add(1200g Flour + 48g Baking Powder)
